Dr. David C. Darwin of Avatar Corporation was invited by Cereal Foods World to prepare a Feature Article on Bakery Release Agents. Cereal Foods World is the bi-monthly journal of the American Association of Cereal Chemists, Inc..
The Feature Article, entitled Bakery Release Agents, has been published in the September-October 2003 issue of Cereal Foods World. The article gives an overview of different types of release agents available to assist bakers in overcoming problems encountered from sticking. Further, the article describes current and future regulatory and product trends affecting release agents in this industry.
